Terroir :
Three vineyards are at the base of this cuvée: en courçon, le moulin, le pont.
2/3 of the vines are on triassien clay - 1/3 on limestone(decomposed Bajocien)

Mode cultural :
The vineyards are in biodynamic agriculture, certified by Ecocert and verified by Demeter. The vineyards are worked without weedkillers, chemical fertilisers, or other synthetic products.To treat the vines we use sulfur, copper and plant concoctions. We make and use our own compost.
The soil is worked manually.

Récolte, vinification
et élevage :

Hand harvested in small baskets, pneumatic press, natural yeast fermentation, vinification and ageing in 228 liter barrels, of which 10% are new, for 12 months.There is a light filtration before bottling. The total SO2 in bottle is less than 50mg/liter.

Dégustation :
A fruity and elegant wine. Notes of honey and spice. The mouth is mineral and complex.

Accords culinaires :
Aperitif, hors d'oeuvres, first courses, and fish dishes.

Temps de garde :
Ready to dink now.
Ageing potential: 10 years
