Vines trained on échalats (stakes)(spacing 1m X 0.80m)
Vineyard in biodynamic viticulture certified by Ecocert and controlled by Demeter. The vines are cultivated without any weed killers, without chemical fertilizers, or other synthetic products. To treat the vines we use sulfur, copper, and plant concoctions. We use our own compost. We work the soil in the vineyard.
All the work in the vineyard is down with horse drawn tools.


Récolte, vinification
et élevage :

Hand harvested ein small baskets, penumatic press. natural yeast fermentation and ageing in 228 liter barrels (of which 1/3 are new) for 24 months.
At the end of the ageing process, the wine was at 14° alc., total acidity was 5.95 gms/ltr (expressed in H2SO4) and there were 4 gms RS.
The wine was filtered before bottling.
Total SO2 is less than 45mg/liter.

Dégustation :
Very concentrated and fine. In the nose: fruits, white flowers, orange marmalade, spices.
The mouth is concetrated and subtel with astonishing length.


Accords culinaires :
First courses, fish, scallops.

Temps de garde :
Should be carafed when it is young.
Ageing potential: 25 ans.
